As I was thinking about our upcoming Valentine's Dinner menu, I remembered a special group of "lover's" who accompanied me on a Foodie Tour of Sicily last April. There were five married couples, some of which had already celebrated their 50th anniversaries! As we visited chocolate makers, cheese makers, olive oil makers, and wined and dined, and visited and talked, what constantly amazed me was how romantic they all seemed! Hand holding, loving smiles, flirtatious gestures, preferred seating arrangements etc. There seemed to be a special energy around all of them, maybe it was due to the lush Sicilian landscapes. You know what they say about Italy! It just made me feel very good, that feeling of love in the air! I would like to share a special recipe with you guaranteed to please your chocolate loving friends for Valentine's Day!
Delice de Chocolat for 6
200 Grams of Imported Bittersweet Chocolate (minimum 53% cocoa content)
1/3 cup of sugar
3 whole eggs
1 cup heavy whipping cream
BEAT EGGS AND SUGAR FOR 12 MINUTES ON HIGH SPEED OF MIXER.
SIMMER WATER IN SAUCE PAN. MELT CHOPPED CHOCOLATE IN BOWL OVER SIMMERING WATER.
ONCE CHOCOLATE IS MELTED BLEND WITH EGG AND SUGAR MIXTURE.
WHIP CREAM TO JUST ABOUT THE STIFF PEAK STAGE IN CHILLED MIXING BOWL.
WHISK 1⁄4 OF CREAM TO THE SUGAR, EGG, AND CHOCOLATE MIXTURE. THEN FOLD IN REMAINING CREAM GENTLY.
FILL DESIRED MOLDS AND REFRIGERATE OR FREEZE
CAN BE SERVED IN POT DE CRÈME POTS, CHAMPAGNE SAUCERS, RAMEKINS
